batch job de/activation of proxy enabled setting at service level
You can de/activate the proxy setting in batch for portfolios, by using the "Change electronic portfolio information" job on a set. Unfortunately you cannot at this stage do the same on Services or Collections.
I have approximately 30 services that I would like to change EZproxy enabled from YES to NO. I do not want to run a batch job on the portfolios - I want the proxy to be determined at service level and the portfolios to inherit the settings. It would be helpful if this could be done as a batch job rather than editing each service manually.

For updating the Electronic Service Proxy Enables (Yes/No) you can now use the following flow:
Run a job -> Information Update -> 'Change Electronic Collection information' job -> Select a set of collection/s -> open the section named 'Change Set Service linking information' -> Proxy enabled (Yes/No) (see attached Electronic Service Proxy.png)

We just migrated over and all our e-collections never had their proxy activations set up. Now I have to go in and activate them one by one because there is no batch job.

That is a nice idea for using the proxy. Actually I was surprised how many uses of proxy exist because I use them just for one reason. Proxies are probably best known for their ability to anonymize web traffic. But my job requires being anonymous. We are security officers and we have to protect ourselves, sources, companies, clients, and partners. I am using now proxy which I found here https://residentialip.net/private-proxies-trial-packages/

We also find that there is limited job available to global update fields at Collection level. Our System Librarian asked us to change the EZProxy setting at services and collection level and we have to do it one by one for over 450 collections, which is time consuming and labor intensive.

This is an excellent idea, we had our proxy provider go down a week or so ago and our users were left with no access to anything through the proxy, either on or off campus. So, I thought, create a set and update the proxy to off. NOPE! Can't do that! I was very disappointed and we had to just leave services unavailable for that period of time (a few hours).
